This is my first ever writeup on Amma’s cook book and here goes the first recipe for it!

VEGETABLE PULAV

This would serve about 2 people who eat pretty well!

Ingredients:

Vegetables like

Carrot -1–2 medium sized

Peas about 2 fistfuls

Beans 5–6

Onion- 1 Large sized

Tomato — 2 Small sized

Ginger Garlic Paste 1tsp

Oil

Mint and Corriander a fistful each

Green chillies 3–4

Curd 1Tbsp

To saute : Cinnamon Bark 2cm, cloves 3, elaichi 1, jeera half tsp

Half cup raw rice

Lets Get to the making:

Before you switch on the stove get these done-

Wash all the vegetables.

Chop the beans and carrot to appropriate sizes as you require in the pulav. Finely chop the onions, green chillies and the tomatoes.

Keep the Mint and Corriander washed and chopped too!

Saute in a pan with 2Tbsp of oil with the ingredients above and also add finely chopped onions and greeen chillies and saute until the onions are golden brown.

Add a teaspoon of Ginger Garlic paste and fry again, to this add the chopped tomatoes and a tablespoon of curd.

Add all the chopped vegetables (beans, carrot and peas) to it fry it for about a minute or two until it becomes dry.

As you are doing this, simultaneously in the cooker which you plan to make the pulav fry the half cup of rice in 1- 2Tsps of Ghee until it becomes dry and gets that amazing flavor.

Once this is done, trasfer the contents of the pan to the cooker and add the following

Water as needed for the rice- Half cup would need 1.5 glasses for me!

A fistful of Mint and Corriander

Salt as needed ( Taste the mixture now and add more salt if needed).

Close the cooker! 3 whistles!

Eat!
