Any Vegetable fry (Poriyal)

This is the typical Poriyal that can be followed using most vegetables.
Easiest side dish for a Veg meal which includes vegetables. Healthy too!
Ingredients Required -
1.The main vegetable which could be any one of the following- about 100–200 grams if needed to serve one.
- Avarakai ( Broad beans )
- Beans
- Ladies finger (Okra)
- Cabbage
- Peerkangai ( Ridge Gourd)
- Beetroot
- Carrot
- Vazhakai ( Green Banana)
2. Medium sized onions 1–2
3. To saute-
- 1/2 Tsp Of Mustard
- 3/4 Tsp of Urad Dal
- 1/2 Tsp of Jeera
- 4–5 Curry leaves
- 1–2 Red or Green chilies (red preferred)
- 1Tbsp of Oil
4. Salt as required.
5. 1/4 Tsp of Turmeric Powder (Can be skipped)
6. Grated coconut 1 Tbsp (Optional)
Method of preparation:
- Before switching the stove, Chop the onions into fine pieces.
- Chop the chosen vegetable into its required appropriate size too.
- Take a Pan and heat the oil, when its heated ( not too much) ,Toss all the ingredients listed under the “To Saute” one by one, frying it intermittently, for about 2–3 minutes only.
- Add the Chopped vegetable, Turmeric and half a cup of water, to ensure complete cooking. Taste for the salt. Add as required.
- Close the pan with a lid, all the dish to cook in low flame to be on the safer side.
- Once all the water has evaporated, Stir the dish 1–2 times.
- Ready to eat!
