Any Vegetable fry (Poriyal)

This is the typical Poriyal that can be followed using most vegetables.

Easiest side dish for a Veg meal which includes vegetables. Healthy too!

Ingredients Required -

1.The main vegetable which could be any one of the following- about 100–200 grams if needed to serve one.

  • Avarakai ( Broad beans )
  • Beans
  • Ladies finger (Okra)
  • Cabbage
  • Peerkangai ( Ridge Gourd)
  • Beetroot
  • Carrot
  • Vazhakai ( Green Banana)

2. Medium sized onions 1–2

3. To saute-

  • 1/2 Tsp Of Mustard
  • 3/4 Tsp of Urad Dal
  • 1/2 Tsp of Jeera
  • 4–5 Curry leaves
  • 1–2 Red or Green chilies (red preferred)
  • 1Tbsp of Oil

4. Salt as required.

5. 1/4 Tsp of Turmeric Powder (Can be skipped)

6. Grated coconut 1 Tbsp (Optional)

Method of preparation:

  1. Before switching the stove, Chop the onions into fine pieces.
  2. Chop the chosen vegetable into its required appropriate size too.
  3. Take a Pan and heat the oil, when its heated ( not too much) ,Toss all the ingredients listed under the “To Saute” one by one, frying it intermittently, for about 2–3 minutes only.
  4. Add the Chopped vegetable, Turmeric and half a cup of water, to ensure complete cooking. Taste for the salt. Add as required.
  5. Close the pan with a lid, all the dish to cook in low flame to be on the safer side.
  6. Once all the water has evaporated, Stir the dish 1–2 times.
  7. Ready to eat!
